Nanaimo bars are a Canadian confection that has been wildly popularized, although I've never heard of it outside of the internet nor have I seen these sold anywhere, meaning I must live under a rock. They're quite delicious although wickedly rich, with a chocolate coconut graham cracker crust, custard filling, and chocolate topping. Now that sounds like an awesome combination.
Base: Melt 1/2 stick butter on the stove at low heat and stir in 2 Tbsp sugar and 3 Tbsp cocoa powder (I used Hershey's). Stir in 1/2 an egg, then cook a little longer til thickened, whisking constantly. Remove from heat and add 1 cup crushed graham crackers, 1/2 cup shredded coconut, 1/2 tsp vanilla, and 1/4 cup chopped walnuts. Press into lined pan and refrigerate til set.
Custard: Mix together 2 Tbsp softened butter with 1 Tbsp milk, 1 Tbsp vanilla pudding powder, dash of vanilla extract, and 1 cup of powderd sugar. Beat until fluffy. Refrigerate til set.
Topping: Melt 1 Tbsp butter and 2oz chocolate Stir well and spread over custard layer. Refrigerate til set.
This is what it should look like once all the layers have set.
Yum, cut into pieces and serve!

Would I make this again? No, it's way too rich and sweet for me, but I can see why it's popular. If you do make it, it's definitely a bring to the office and share with others type of deal.
