So this dish is one example of that. I definitely fell into the New American shrimp 'n grits trap, but I'm clawing my way out and won't be ordering it in restaurants for awhile. This dish is deliriously good and take about 30 minutes of prep with fantastic results. Here's what I did:
- Cook polenta/grits according to package instructions, but replace water with milk, add a healthy knob of butter at the beginning (butter makes everything better), and a liberal serving of parmesan cheese when it's almost done cooking.
- Remove some spicy sausages from the casing, break sausage into pieces, and brown with garlic. Add shrimp until they turn pink, then squeeze in some lemon juice.
- Top polenta with sausage and shrimp. Decorate with some green stuff if you'd like (scallions, parsely, cilantro, whatever).
